First, you should mix 200g sugar, vanilla essence, 8 eggs yolk and 1l milk cream until you have a homogeneous mixture.
Take that mixture to the oven in a bain-marie, mixing it until the cream forms a thin layer in the spoon.
Distribute the cream in some recipients, like a coffee mug, and leave them in the freezer for 5 hours.
Pour some crystal sugar in the top of each coffee mug, torching them with the fancy cooking torch until it forms caramel, and then serve!
